How well does that thing fly using just one engine powering both props?

Same flight characteristics, just less power.

In airplane, no problem with most weights. Once converted, may have problems hovering. A run-on landing to a prepared surface would be recommended.

So basically the same way a 2 engine helo performs OEI?
 
if you lose one engine does the other engine instantly provide the extra power needed to keep the prop on speed or do you need to add the power your self?

Very long story short, the computers double the power demand signal to the other engine up to its limit. They also adjust the pitch of the proprotors to keep them at the selected rpm if there isn't enough power to keep them at that speed.
