I was at the SpaceX launch and can't load a video, but it was amazing to say the least

Noooo idea. Maybe practically unusable fuel capacity, or maybe launch with less but they can top up at the tanker.

looks like from public info they cannot take off with max fuel and max payload, from public info the F/A-18E/F can but they weigh slightly less and carry slightly less fuel so that would be why.
